Marion County has at least four commercial bakeries that can make the Thanksgiving holiday easier by filling special orders.

Rachel Collett of CB Baked Goods in Marion said she has one customer who orders a big batch of bierrocks every year.

“Their family doesn’t like turkey, so they have bierrocks instead,” she said. “Maybe I should start to make turkey bierrocks.”

She said others order bierrocks, cinnamon rolls, and sticky buns to serve company that stay over and need things to eat before and after the Thanksgiving meal.

Norel Farms Bakery in Hillsboro gets a variety of orders for Thanksgiving, including dinner rolls, pies, and bierrocks. Owner Rachel Schmidt said some people travel from outside the county to purchase her gluten-free products.

Baker Linda Martinez of U Knead It in Peabody said she gets a huge order every Thanksgiving from a family she grew up with in Carlsbad, New Mexico.

“I hadn’t seen them since I was a freshman in high school, and I was so happy to reconnect with them,” she said.

A family relative from Minnesota will be picking up 12 pies, two dozen cookies, a dozen tacos, and a dozen Bierock to take to New Mexico. The pies are distributed to family members as Christmas presents, with each family ordering the kind they want.

Martinez said her cherry and apple pies are most popular because she makes them from fresh fruit.

Jenny Lee of FamLee Bakery in Marion said pumpkin pies have been their most popular order this Thanksgiving.
