With remodeling going smoothly in Hillsboro’s “red barn” on Main Street, Rachel Schmidt is optimistic that she will be able to open her Norel Farms Bakery the first week of June.
Remodeling has taken a lot of work, Schmidt said. The exterior shell of the building is about the only thing that is the same as when she and her husband, Norman Schmidt, bought the building.
When they lived in Georgia, Schmidt baked items to sell at farmers markets. When they moved to Hillsboro, she already had about half of the equipment she would need for a full bakery, so she decided to open one. Schmidt plans to have something different every day of the week at the bakery.
Schmidt said one of the benefits of moving from Georgia to Hillsboro is that people can pronounce her last name again. People in Georgia usually mangled the pronunciation, and many gave up and pronounced it like “Smith.”
