Rachel Collett expects to make her 100,000th bierock sometime soon at CB Baked Goods, a to-go business she opened about seven years ago in Marion.

Her previous professional cooking experience was as a cook at her children’s private school, she wrote in a news release.

“I knew everybody loved bierocks here,” she wrote. “This was a food their grandmothers made, their great-grandmothers.”

Collett’s sweetened dough recipe is a secret.

“They’re time-consuming,” Collett wrote. “I’ve gotten it down to where I can make them in my sleep.”

CB Baked Goods’ business increased more than 20% during COVID-19, she wrote. People weren’t going to restaurants and “were tired of their own cooking,” she wrote.

Collett, who tracks orders through a point-of-sale app, wrote that orders fluctuate each week. Whoever orders the 100,000th bierock will receive a gift basket from local businesses including a night’s stay at a boutique hotel, restaurant gift certificates, and items from Tap Truck Kansas, which her son, Zach Collett, owns.

“Once it’s happened, I’ll have free cookie day,” she wrote. “Come celebrate with me.”
